The Carski vinogradi estate at Gnojnice, its own vines falling away below the terrace and an infinity pool set over them — a Mediterranean kitchen cooking close to the land, and a cellar where the wine ages in concrete eggs, ten minutes from the Old Bridge. This is a table and a cellar, not a place to sleep: on the Water Road it lays the farewell dinner while the group is still in Herzegovina.
